Packed full of green goodness and dressed with a tasty tahini dressing this salad is fresh and a perfect go to during the summer season. Little prep needed, it’s quick and simple to whip up. Enjoy!

 INGREDIENTS:

  • 1 packet baby cos lettuce
  • 1/2 cucumber
  • 1 cup edamame beans
  • 1 avocado
  • 1/3 cup pumpkin seeds
  • 1 handful fresh mint

Green Tahini Dressing:

  • 2 Tbsp tahini
  • 1 handful fresh mint
  • 1 handful fresh coriander
  • 3 Tbsp lemon juice
  • 1 tsp maple syrup
  • 1 tsp garlic
  • 3-4 Tbsp water
 
INSTRUCTIONS:
  1. Bring a small pot of water to a boil and cook edamame beans until tender. Drain and cool.
  2. Using a peeler, peel cucumber into ribbons. Half, de-stone and peel skin from avocado before cutting into small cubes. Roughly chop mint. 
  3. Heat a dry pan over a medium heat. Add pumpkin seeds and toast until golden. Stirring often to cook evenly. Remove from heat and let cook.
  4. For dressing— place all ingredients into a blender and blend until green and smooth. Add more water if it is too thick. 
  5. To serve, layer lettuce, cucumber ribbons, edamame beans, avocado onto a large serving dish. Dress with tahini dressing and finish with toasted pumpkin seeds and roughly chopped fresh mint.
