This rainbow bowl does exactly what the name suggests, nourishes your body with a bunch of delicious colourful ingredients. Often ingredients of the same colour share similar vitamins and nutrients, so a bowl with all the colours of the rainbow will always fuel you with a variety of health benefits. This bowl looks so pretty, almost too beautiful to eat (but we recommend you do).

Ingredients:

Hummus

  • 2 cups spinach
  • 1/2 cup corn kernels (fresh from a cob if possible) 
  • 1/2 cup edamame beans 
  • 1/2 cup shredded cabbage
  • 1/4 cup carrots, sliced
  • 1/2 cup quinoa, cooked
  • 1 radish, sliced
  • handful of pea shoot sprouts (or other type of sprouts) 
  • 1/2 avocado, sliced
  • sesame seeds
  • juice of 1/2 lemon

 

Serves -2


Method:

  1. Start by filling the bottom of the bowl with spinach 
  2. Place the corn, edamame, cabbage, carrots, quinoa (cooked), radish, sprouts, and avocado arranged in small piles on top of the bowl. 
  3. Sprinkle with sesame seeds 
  4. Dress with some lemon juice if desired (or any dressing you like!)
