RECIPE BY FOODPASSIONICAL

BBQ PARTY! Get your skewers and chop your favourite veggies. This recipe will make you want to have BBQ nights more often than usual. The satay sauce is so flavourful and coats the grilled veggies so well. Enjoy a slightly sweet, salty and flavourful veggie kebab right in your home. 

INGREDIENTS
  • VEGAN SATAY SAUCE
    • 1 small Onion
    • 1 tsp Garlic Powder
    • 1 tsp Ginger Powder
    • 2 1/2 tbsp Brown Sugar
    • 1 tbsp Soy Sauce
    • 4 tbsp Oil
    • 6 Pineapple (cubed)
    • 1 tbsp Sambal Paste
    • 1/2 cup Roasted Peanuts (reserve 2 tbsp for sprinkling)
    • Salt to taste
    • 1/2 cup Water (add more or less until desired consistency is achieved)
  • VEGGIE KEBAB
    • 1 Cucumber
    • 1 small Pineapple
    • 1 Red Onion
    • 1 packet Mushrooms
    • 3 small Capsicums (you can use a mix of red, yellow and green)
METHOD
  1. VEGAN SATAY SAUCE
    1. Blend all the ingredients till it turn smooth. Next pour the sauce into the sauce pan and cook in a medium low heat. Once it boil removed from the heat and serve with the veggie kebabs.
  2. VEGGIE KEBABS
    1. Preheat the grill pan to medium low heat.
    2. Chop all the veggies into a large chunks. Work the vegetables onto the skewers on a random pattern (soak those wood skewers for at least 15 min before use).
    3. Brush some oil onto the veggies before grilling, remember rotating them every 2-3 minutes in order to get the grilled mark.
    4. Serve warm with vegan satay sauce.
