Baked Chocolate Berry Donuts

These baked vegan chocolate doughnuts are topped with a delicious black-goji berry glaze. Baked instead of fried for a much healthier option (and much more cakey!), this chocolatey treat never fails to impress!

INGREDIENTS: 

  • 1 flax eggs (1 Tbsp flaxseed meal + 3 Tbsp water)
  • 1/2 cup coconut milk
  • 1/4 tsp apple cider vinegar
  • 1 tsp baking soda
  • 1/3 scant cup maple syrup
  • 2 Tbs coconut sugar
  • 1/4 cup melted coconut oil
  • 1 tsp pure vanilla extract
  • 1/4 tsp sea salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup self-raising flour 

Method:

  1. Preheat oven to 180°C 

  2. Sift flour + cocoa powder into a mixing bowl, add the sugar +baking powder and mix together.

  3. Heat the coconut oil in the microwave until warm-hot + add to the mixing bowl with the vanilla and melted coconut oil and whisk until smooth.

  4. Place the doughnut batter into the donut tray evenly, using a spoon.

  5. Bake for 15 minutes until lightly browned on top

  6. Remove from oven, let cool for a few mins before transferring to a cooling rack. Allow to cool completely before adding glaze.

 

INGREDIENTS: For Glaze

  • 100 g melted vegan white chocolate
  • 3 tsp black goji berry powder
  • 2 tsp butterfly pea powder (option for colour)
  • 1 tbs melted coconut oil

Method:

  1. Combine all ingredients & whisk until smooth.
  2. When the donuts are cook, dip them in the glaze and enjoy!
