Marbled Chocolate Pumpkin Bread

This marbled chocolate pumpkin bread takes your classic pumpkin bread to another level. Layers of gooey pumpkin batter swirled together with fudgy brownie like batter to create the marble loaf of your dreams! Plus it's naturally vegan, gluten free and refined sugar free!

INGREDIENTS:

●  1 3/4 c flour or white wheat flour
●  1 tbsp pumpkin spice
●  1 tsp baking powder
●  1 tsp baking soda
●  1/4 tsp salt
●  1.5 c pumpkin purée
●  2/3 c coconut sugar
●  1/4 c almond milk
●  1 flax egg*
●  1/4 c applesauce
●  1/4 c coconut oil (melted)

●  1/4 c vegan chocolate chips

 

 

Chocolate Swirl

●  1/4 c cocoa or cacao powder
●  1/2 c vegan chocolate chips

●  2 tbsp almond milk

INSTRUCTIONS:

  1. Preheat oven to 350F and line a loaf pan with parchment paper.

  2. In a large bowl, combine flour, baking soda, baking powder, pumpkin spice andsalt.

  1. In another bowl, combine pumpkin puree, almond milk, applesauce and coconut sugar.

  2. Pour wet ingredients into dry and stir until just combined (don’t over mix!)

  3. Transfer half your batter into a separate bowl. Stir in cocoa powder, almond milkand 1/2c chocolate chips.

  4. Spoon half of your regular batter into your loaf pan. Layer half of your chocolatebatter on top. Repeat this step with the regular batter and then the chocolatebatter.

  5. Using a knife or toothpick, swirl batters together a few times (don't overdo it orbatters will mush together.) Sprinkle remaining 1/4c chocolate chips on top.

  6. Bake for about 55 minutes or until toothpick comes out almost clean.

 

NOTES:

*For flax egg combine 1tbsp flaxseed with 3tbsp warm water and let sit to gel for 5 minutes.
