These salted caramel brownies are made with just a handful of healthy ingredients and taste like a rich, fudgy brownie! The delicious brownie bottom is topped with an ooey gooey sea salt caramel that is guaranteed to just melt in your mouth! Naturally vegan, gluten free and refined sugar free.

 

PREP TIME: 15 mins 
TOTAL TIME: 15 mins
SERVINGS: 10 - 12 brownies

INGREDIENTS:

Brownies:

●  1 1/2 cup pitted medjool dates
●  1 cup walnuts
●  1/2 cup hazelnuts
●  1/3 cup cocoa powder
Salted Caramel:
●  1/2 cup almond butter
●  1/4 cup maple syrup 
●  1 Tbsp almond milk
●  1 Tbsp coconut oil
●  1/4 tsp sea salt
INSTRUCTIONS:

Brownie:
  • Combine all ingredients in a food processor until it reaches a brownie consistency. Press down into a loaf pan lined with parchment paper.
  • If dough is too crumbly, add a splash of plant milk and pulse again. It should be moist and not too soggy. It should hold its shape when pressed.
    Salted Caramel:
    1. Stir together all ingredients until smooth and pour over top of brownie layer. Place in the freezer to firm (about 4 hrs)

    2. Once set, sprinkle with flaky sea salt, slice into squares and enjoy! Best stored in the freezer. 

    Notes:
    • Use soft, pitted medjool dates for this recipe. If your dates are not soft, soak them in warm water for 5-10 minutes, drain, and continue on with recipe.
