I’m so happy to be inspiring people to get making nourishing rainbow recipes, and to show how fun + delicious plant-based foods are! For me, gorgeous, delicious food is definitely the way to my heart, so I’m bringing you these 4 Valentine’s recipes guaranteed to make this Valentine’s Day a real winner.

1. Oreo Chocolate Orange Tart

 

Just when you thought the chocolate orange combination can’t get any better. But it does… with a crunchy oreo base and a decadently smooth coconut + zesty orange filling, this tart pulls out all the stops!

Oh, and it’s a no-bake, nut-allergy friendly and no-roll delight. It’s a sure way to impress your other half, and to treat yourself too this Valentine’s!

 

 

2. Acai & Black Goji Glazed Donuts

 

What better way to show your significant other how much you care, than with a ring? And more than just one, a box full of the most delicious donut rings! (Please don’t blame me if they were expecting the metallic, sparkly kind.) What’s more, these donut are baked, not fried! So not only do they taste scrumptious and cakey, they’re also WAY healthier – double winner!

I used to assume donuts were too complicated to make yourself so I didn’t try, until recently I found they’re super easy to make + to adapt to your favourite flavours.

For this batch, the doughnuts themselves are a simple vanilla flavour whilst the glaze is a sweet berry delight, packed with antioxidants too!

 

 

3. 3-Ingredient Strawberry Mousse

 

This dessert is super smooth, creamy + fruity whilst surprisingly also being packed with protein! So I definitely don’t feel guilty when I devour a 2-person serving in one sitting. Trust me, it’s hard not to with this strawberry goodness.

And the best part? It only takes 5 minutes to make! Just 3 simple ingredients but you can add little extras too like desiccated coconut or chocolate bits for those extra special vibes!

If strawberries aren’t your thing, you can easily substitute for another berry, the more the berrier.

 

 

4. Rainbow Pancakes

  

Nothing makes my heart fill with joy more than a big stack of thick fluffy pancakes. And to make it totally swoon-worthy, these rainbow unicorn pancakes are to sigh for!

With this recipe, there’s only one thing better than eating them; that’s seeing my family’s eyes light up and a huge grin plastered on their faces as soon as they see it. That’s why I’ve included this recipe as part of this Valentine’s Special, as it’s the ultimate happy stack, guaranteed to make your loved one’s heart sing.

They’re fluffy and thick, and powdered with superfoods like pitaya and blue spirulina to really leave you feeling good!
