With that in mind, I’ve created a day of plant based eating with recipes that can be made in just 30 minutes or less from start to finish. Your cooking and meal prep can finally be hassle free, healthy, and irresistibly delicious!

1. Breakfast: Cinnamon Roll Baked Oats

 

These cinnamon roll baked oats taste like an ooey gooey cinnamon roll...in oats form! Made from real, whole ingredients like rolled oats, banana and almond milk, it’s the perfect fuelling breakfast that is both healthy and delicious! 

Baked oats have become one of my favourite morning breakfasts! They're so warm and cozy and keep me feeling satisfied all morning long. All you do is combine all your ingredients together, transfer your mixture to a baking dish, and let your oven do the work! These cinnamon roll baked oats are loaded with all those cozy cinnamon spice flavours and are topped with a delicious, silky smooth vanilla swirl. They're a cinnamon roll lovers dream, yet made with healthy, good for you ingredients. Not to mention it makes the whole house smell like a dream!

 

  

2. Snack: Ferrero Rocher Bliss Balls

 

These ferrero rocher bliss balls are so easy to make and taste like those classic ferrero rochers that we all know and love! They’re made with just 5 simple ingredients including dates, coconut and cocoa powder, and are stuffed with a surprise hazelnut centre for a delicious treat that everyone will enjoy!

 

Ferrero rochers were always my favourite chocolates growing up! I loved biting into them and discovering that crunchy hazelnut filling in the centre amidst all the delicious chocolate coating. These bliss balls are a healthy take on those classic ferrero rochers that we all know and love! They come together using only 5 good for you ingredients, with no baking required.

The hazelnut butter combined with the cocoa powder also gives these bliss balls a heavenly nutella flavouring, without any of the added sugars or processed ingredients. These are definitely one to add to your weekly treat rotation!

  

 

3. Lunch: Chili Lime Black Bean Tacos

These Chili Lime Black Bean Tacos are perfect for a fresh and fun weeknight dinner! They’re packed with flavour and are topped off with homemade mango salsa for that classic sweet and spicy combo!

Whether it’s taco Tuesday, or any other day of the week, these are a total crowd pleaser! They are spiced up with chile lime seasoning and curry powder, and topped withhomemade mango salsafor a flood of irresistible flavours! They’re also completely vegan, gluten-free and are made with whole, fresh ingredients. I used coconut flour tortillas for these tacos and could not have been happier with how they turned out! That subtle hint of coconut blends incredibly with the sweet and spicy flavours of these tacos. This is a staple weekday meal that you won’t want to miss out on!

 

  

 

4. Snack: Vegan Chocolate Espresso Donuts

 

These vegan espresso donuts are a chocolate and coffee lover’s dream come true! They're moist and fluffy at the same time, sweetened with raw cacao powder, and topped with a silky smooth espresso chocolate glaze. Baked rather than fried and made with wholesome ingredients for a delicious treat that everyone will enjoy!

Ever since I got my donut pan I've been testing out so many different donut recipes and without a doubt these espresso chocolate donuts are one of my FAVOURITES! I was shocked at how you can really taste the espresso in these and yet they're perfectly sweetened with the cacao powder at the same time. And is there anything better than chocolate AND coffee combined?! Enough said, you guys have to try these!

  

  

 

5. Dinner: Air Fryer Tofu

This air fryer tofu is perfectly crispy on the outside, soft on the inside and is both vegan and gluten free! Made with just 5 total ingredients, it's the perfect meal prep staple that's both easy and delicious.
