Plant Based Purple Singapore Noodles anyone?

This delicious noodle dish is one of our faves, with the tasty special addition of this newly discovered Big Green Organic Food Organic Sweet Potato & Purple Yam Vermicelli.

Singapore noodles aren't actually authentically Singaporean, and should you visit the small island on the southern tip of Malaysia, you may find it hard to... find! Although over recent times, it can be found at many local Hawker centres.

Authentic or not, Singapore noodles are absolutely mouthwatering for those of us that love stir-fried noodles, veggies with herbs and spices.

These purple vermicelli noodles soak up the flavours wonderfully and can be used in a host of stir-fried noodle dishes, or even as a filling for Rice Paper Rolls (hmmm a recipe for next time perhaps).

INGREDIENTS
  • 1 Pack Big Green Organic Food Vermicelli Noodles
  • 1 onion
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1 cup snow peas
  • 6-8 sweet snacking peppers
  • 1 tbsp toasted sesame oil
  • 2 tsp curry powder
  • 1 tbsp coconut aminos
  • cayenne to taste
  • green onions to serve
METHOD
  1. Begin by slicing the onion into half circles, slicing the peppers, mincing the garlic, and grating the ginger. Add to a sauté pan along with the coconut aminos and sesame oil.
  2. At the same time boil a pot of water and cook the vermicelli noodles according to package instructions.
  3. Add the curry powder, cayenne, and snow peas to the sauté pan.
  4. Strain the noodles and add to the sauté pan. Cook for about 5 minutes, until everything is evenly mixed together.
  5. Top with green onions and serve.
