RECIPE BY KATIE FROM THE ALL NATURAL VEGAN

These Hawthorn Berry Muffins are a delicious and healthy treat that can be enjoyed any time of day. Great as a snack or breakfast and served with hot coffee or tea. Hawthorn berries are known for their numerous health benefits, including their ability to improve heart health and regulate blood pressure. Thanks to Big Green Organic Food, Hawthorn Berries are now very accessible and available for home cooks. 

INGREDIENTS
  • Dry Ingredients:
  • Wet Ingredients:
    • 1 ¼ cups unsweetened soy milk
    • 2 tablespoons vinegar
    • ½ cup unsweetened applesauce
    • 3 tbsp vegan yogurt
    • 2 tsp vanilla extract
    • 6 tbsp water
METHOD
  1. Begin by soaking the hawthorn berries in warm water according to package instructions.
  2. Next, make the flax egg by combining the ground flaxseed with the water, mixing, and setting aside for 15 minutes.
  3. Make the buttermilk by combining the vinegar and soy milk together and setting it aside. Preheat the oven to 350.
  4. Combine the remaining dry ingredients together in a medium bowl and mix until combined.
  5. Add the wet ingredients, buttermilk, and flax egg. Mix until a smooth batter is achieved.
  6. Strain and pat dry the hawthorn berries. Add to the bowl and mix.
  7. Add the batter to a large muffin tin. Place in the oven and bake for 25 minutes.
  8. Once golden brown on top, remove from the oven and place on a wire rack to chill for 15 minutes. Serve and enjoy!
