1. Apple Cinnamon Oatmeal Bars


These apple cinnamon oatmeal bars take just minutes to prep and are loaded
with cozy winter flavors. Perfect for on the go breakfast or an easy dessert
that’s both healthy and delicious!


These apple cinnamon oatmeal bars are warmly spiced, packed juicy cinnamon
apples, and have a delicious soft and chewy texture. Not to mention they will make
your kitchen smell like an absolute dream! Trust me, you guys are going to love
these baked oatmeal bars!

COOK TIME 25 mins
TOTAL TIME 35 mins
SERVINGS 9 squares


INGREDIENTS
  • 1 c applesauce
  • 1/3 c almond butter
  • 1 flax egg
  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • 1/4 c maple syrup
  • 1 c rolled oats
  • 1 1/4 c oat flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 c chopped apples
METHOD
  1. Preheat oven to 350F and grease or line an 8x8 baking pan with parchment paper.
  2. For flax egg, combine 1tbsp ground flaxseed with 2.5tbsp water. Set aside 5 mins to “gel.”
  3. In a medium bowl, combine oat flour, oats, cinnamon and baking powder.
  4. In a separate bowl, combine all wet ingredients, including flax egg.
  5. Add dry ingredients to wet and stir till combined.
  6. Fold in 2/3c of chopped apples.
  7. Pour into prepared baking pan and top with remaining 1/3c apples.
  8. Bake 25mins until lightly golden. Let cool in pan for 10mins and then transfer to a cooling rack to cool completely. Slice into bars and enjoy!

 

2. Almond Butter Granola


This almond butter granola is clustery, crunchy and will make your kitchen
smell amazing! Perfect for on the go breakfast, healthy snacking, and
everything in between!


This almond butter granola is so easy to make and requires just a few simple
ingredients that you probably already have in your pantry. My favourite part is that
it’s super easy to customize to different flavours and you can totally add in any of
your favourite mix in’s like nuts, dried fruit, or chocolate chips. Enjoy it in yogurt
and oatmeal bowls, topped on smoothies, or straight out of the jar!

INGREDIENTS
  • 2 c rolled oats
  • 2/3 c walnuts
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 c almond butter
  • 1/4 c maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil
  • 1 tbsp maca powder (optional)
INSTRUCTIONS
  1. Preheat oven to 325F and line a baking sheet with parchment paper.
  2. Combine all dry ingredients.
  3. Combine wet ingredients.
  4. Pour wet ingredients into dry and stir until oats are completely coated.
  5. Spread mixture onto prepared baking sheet in an even layer and PRESS down with a spatula.
  6. Bake for 25 mins until lightly golden.
  7. Let cool completely before gently breaking into clusters! (Don’t skip this step as this is when the granola gets crispy!)
  8. Store in an airtight container or mason jars

 

3. Chocolate Chip Cookie Baked Oats

These chocolate chip baked oats are made with healthier ingredients like oats,
almond milk and nut butter. They taste like you’re eating cake for breakfast and
are so easy to make!


Baked oats have been my new favourite breakfast lately and truly hit the spot every
time! They taste like you’re having a delicious, fluffy cake for breakfast, yet are filled
with nutritious ingredients to fuel your day. My favourite part about baked oats is that
they’re so easy to customize to any flavour. You can throw in your favourite mix-in’s,
add in protein powder, or boost them with superfoods!

INGREDIENTS
  • 1/2 c rolled oats
  • 1/2 tsp baking powder
  • 1/2 c almond milk
  • 3 tbsp applesauce
  • 1 tbsp cashew butter
  • 1 tbsp chocolate chips
  • 2 mini cookies, crumbled (optional)
INSTRUCTIONS
  1. Preheat oven to 375F and lightly grease a small baking dish or ramekin.
  2. Blend together all ingredients except chocolate chips and cookies in a high speed blender until smooth.
  3. Stir in chocolate chips and crumbled cookies by hand.
  4. Pour batter into baking dish and top with extra chocolate chips.
  5. Bake for 23-25mins until lightly golden.
  6. Top with a splash of almond milk and enjoy!
