A Spanish side staple of spicy red sauce served over fried potato cubes. I had the most delicious plate of these deliciousness in Seville 🇪🇸 My spin on the classic is a pan-fried version with some extra spices. This is the ultimate comfort food for me - crispy potatoes, creamy, spicy sauce, I can eat it everyday!

Serves 3-4

Ingredients
  • 4 lb russet potatoes, washed thoroughly
  • 2 tbsp + 1 tbsp extra virgin olive oil, divided (for the sauce and the potatoes)
  • 1 tbsp smoked paprika (or as needed)
  • 1/2 tsp ground cayenne (or as needed)
  • 1 tsp garam masala
  • 1 tsp sriracha
  • 2 tbsp corn starch
  • 1 cup water or vegetable broth 
  • 1 tbsp + 1 tbsp lemon juice, divided (for the sauce and the aioli)
  • 1/2 cup vegan mayo (for the aioli)
  • 3 cloves of minced garlic (for the aioli)
  • Freshly chopped parsley or chives, as needed
  • Salt, to taste 

Instructions

  1. Boil the potatoes in a pot of salted water
  2. Once they are fork-tender, set them aside to cool
  3. Cut them into bite-size cubes
  4. heat a cast-iron skillet, drizzle olive oil on the pan and place the potatoes onto the pan. Let the potatoes crisp up on all the sidess on medium-low heat. This takes about 25-30 mins
  5. Transfer the potatoes to a serving place and set aside
  6. For the sauce, heat a saucepan to medium and add 1 tsp olive oil
  7. Add the smoked paprika, cayenne, sriracha, and salt
  8. Bloom the spices for 40 seconds
  9. Add the cornstarch and the broth (or water) and keepwhisking, making sure there are no lumps
  10. Once the sacethickens, turn off he heat and add the lemon juice and set aside
  11. For the aioli, combine whisking the mayo with the minced garlic, sauce and lemon juice
  12. Serve by spooning the brava sauce and aioli on top of the crispy potatoes
  13. Srpinkle some fresh chives or parsley.
