Fresh Tomato & Roasted Red Pepper Summer Salad

Quick to put together this makes for a great fresh side salad. A great addition to any lunch or dinner bbq spread. Packed with bright colours and fresh flavours.

 

 INGREDIENTS:

  • 1 packet mixed leafy greens
  • 2 cups cherry tomatoes
  • 1/2 cucumber
  • 1/2 red onion
  • 1 1/2 cups fire roasted red peppers
  • 1/3 cup dairy free feta
  • Drizzle of balsamic vinegar
  • Salt + pepper to taste

 

INSTRUCTIONS:
  1. Cut cherry tomatoes in half and set aside. 
  2. Finely chop cucumber, roasted red peppers and red onion. 
  3. On a serving dish, layer leafy greens, cherry tomatoes, cucumber, roasted red peppers, and red onion. 
  4. Drizzle with balsamic, crumble with feta, and season with salt and pepper.
